(each ion, say, cation or anion can make many hydrogen bonds with water molecule.) about sugar, polar property of the sugar, say some hydroxyl moiety of it and it's ionated form (some of them are ionized because of their innate pK value at that pH ) can make sugar interact with water or other polar solvent. so, like dissolves like. |
