Everybody knows it but unfortunately most people does not know its real taste. Obviously two points are important in determining the taste of U-dong. First, the base soup is quite important. It should be based on Tuna.(I am not quite sure it in English but in Korean it is called Darang-ea) If is more based on small fish(Myul chi), it is quite a Korean dish style.(called Party Noodle) Second, the noodle is quite important in determining its taste. They should have some kind of stiffness. Otherwise it can't be called as U-dong. This is the most different character between Japanese noodle and Korean noodle. In Japn, there are lots of noodle restaurant which is maintained by the family for several decades such as cold noodle shop in Korea. Also many noodle dishes come with the rice. This is quite different. In my personnal opinion, as far as the noodle goes, there is actually no restaurant for U-dong. But as has been mentioned, GiSoYa is quite close to the taste in soup. Ther are several Hotel restaurants who hires Japanese cooker. But their prices is too high.(Usually 20,000 - 30,000Won.) I do not recommand to go there. But if you have some chance to visit Japan, try to visit their own famous noodle shop. Each region has different their style. For the real taste. -man |
